Grass Fed Galician Blonde

Rubia Gallega (Galician Blonde) is a breed of cattle indigenous to Galicia, Northwest Spain. These cattle graze on the meadows of Galicia for up to 8-15 years where they grow mature and put on layers of marbled fat. This gives the beef an extraordinary flavour, an intense beefy-ness and succulence brought about by a beautiful but subtle marbling. The unique taste experience is due to the natural and free way the cattle are reared. Rubia Gallega beef graces the menus of many top restaurants in Spain, including the renowned Asador Etxebarri, in Bizkaia.

Maturity equates to flavour

Our limited quantity Galician beef is imported to us by Discarlux and comes from a retired dairy cow 8 years old. These older cows are chubbier animals, which have a higher percentage fat content and as such have more marbling, giving these beef steaks a distinct and very unique flavour. The consensus used to be that old cattle means tough meat, but this beef is dry aged for more than 90 days which not only further intensifies the flavour but also tenderises the meat. While the texture is different than that of a younger heifer, the flavour is much more developed and distinctive.

Rubia Gallega Ribeyes have a strong beefy flavour and intense marbling, flavours of umami with subtle notes of mushroom.

Each of our Galician beef Ribeyes undergo a careful and very specific preparation and cooking method, which needs to be carried out in order to obtain the best out of this incredible beef. Chef Mario’s technique of cooking the bone-in steaks on a very hot grill to produce a good sear and seal with an almost crispy crust on the outside, and a rare and tender center. Afterwards, the steak is removed from the bone and sliced.

Striploin

Rubia Gallega Striploins have creamy fat and good marbling, with a lasting, red wine-like flavour.
